12. Vecchia Scuola Bolognes - Jan 20

Today, I am stepping out of my comfort level, going the mile,
Took a cab to a day of cooking school in Bolognese style.
A group of instructors said put on the T-shirt and cap.
Take 60 kilograms of this special flour, in the center you tap
Six eggs together are stirred together with the flour,
Then you learn to knead correctly, for over an hour.
Rolling the dough is also an art,
As well as cutting and folding each pasta part.
Tortalini, tortelli, tagliatelle, each has a name,
Depending on the stuffing and shape, they are not the same.
Stephania, the owner’s daughter, was our instructor for the day,
Spoke in English and corrected us to the Bolognese cooking way.

I met two wonderful women in the class,
One now living in Zurich, a Texan expat,
A flight attendant from Florence, together we sat.
We savored our creations in a three course meal with wine,
Ending with dessert, and  cafĂ© to feel quite sublime.
After changing hotels for my new found friend,
We parked at my hotel, and the evening began.
We wandered the bustling evening streets,
Came upon two Russian women that we did meet.
Meandering a backstreet alley we did stop
Full of various fish, meat and flower shops.
Stopped for an evening for the last glass of wine,
We chatted, and laughed and fast went the time.
So much to appreciate when you share life’s stories,
Expanding your friendships and forgetting the worries.
It was a great day, with experiences never to forget.
Each day an adventure, open your mind if you just let it!
